Marcus advises private collectors on what to buy, what to hold, and — most often — what to stop buying. He has managed cellar programs for restaurant groups and now works primarily with first-time collectors building their first hundred bottles.
His view is that most cellars fail for organizational rather than oenological reasons: bottles get forgotten, not spoiled.
